My Fave American Recipes!!


How wonderfully strange and fun it is when people ask for my recipes!!
One day you're a mum with messy hair who probably has not showered in a couple days; the next you're a baking "guru" of sorts...
Well, maybe I haven't hit guru status just yet, but look out Martha Stewart - I'm coming for you!! 

Some people have been curious about two of my recipes in particular - and these two just happen to be my two top 'American' favourite recipes to make!
 
First, the Sunday morning staple - PANCAKES!!

Fluffy and light...perfect slathered in Maple syrup!! 
135g flour 00
1 tsp baking powder
½ tsp salt
2 tbsp fine sugar
130ml milk
1 large egg, lightly beaten
2 tbsp melted butter (allowed to cool slightly) or olive oil, plus a bit extra for cooking

Sift together the dry ingredients. Whisk together the milk, egg and melted butter. 
Add the wet into the dry mix, and stir with a fork - try not to incorporate too much air. 
Let the mixture stand for a few minutes while you prepare a pan with a bit of melted butter or oil (Not too hot to burn the butter!) Ladle about a quarter cup of the mix into the pan and cook until you see bubbles form and pop around the edges, turn and cook until golden brown. Keep warm under a tea towel or in a warm oven. 
My next favourite which makes a weekly (at least!) appearance at my house is TORTILLAS!!
 
We love burritos, tacos, and anything mexican around here - I have only recently started making my own tortillas rather than buy them at the shop and the difference is HUGE!!! Takes a bit of time, but worth it!

     400 gr flour 00
     1 tbsp butter (cold) cut into small cubes
     1 tsp baking powder
     pinch of salt
     175 ml super hot water

Mix the flour, baking powder and salt together. Rub in the butter cubes until they are "sandy". Slowly incorporate the hot water until it comes together in a ball, turn out onto a board and knead until you have a nice smooth texture. Let rest for 10 minutes and then form into about 8 pieces, rolling out with a rolling pin until very thin. In a hot pan, cook the tortilla for about 30 or 40 seconds a side (there will be some bubbles forming!) and then flip for another 30 seconds on the other side. Don't over cook or they will become dry and brittle and hard to roll! Keep fresh in a warm oven covered by a damp clean tea towel. 
With these you can add in any dry spices you like! I love adding in a bit of chili powder or some chipotle and chili salt...the possibilities are endless!! Stuff these with grilled chicken, avocado, lettuce, hot sauce and a squeeze of fresh lime to blow your mind!

Come meravigliosamente strano e divertente è quando le persone 
chiedono per le mie ricette !!
Un giorno sei una mamma con i capelli disordinati che probabilmente 
non ha fatto la doccia per un paio di giorni;  
il prossimo una "guru" di cucina ...

Beh, forse non ho colpito ancora questo status di guru, ma stai attenta Martha Stewart -  
Sto venendo per te!!

Alcune persone sono state curioso di due delle mie ricette, in particolare - e questi due appena capita di essere i miei due migliori ricette preferite 'Americani'!

In primo, la piu importante per Domenica mattina - PANCAKES!!

 
Soffici e leggeri... perfetti ricoperti con sciroppo d'acero!!
135g di farina 00
1 cucchiaino di lievito in polvere
½ cucchiaino di sale
2 cucchiai di zucchero fine
latte 130ml 
1 uovo grande, leggermente sbattuto
2 cucchiai di burro fuso (lasciato raffreddare un po') o olio d'oliva, oltre a un po' di più per la cucina

  Setacciate insieme gli ingredienti secchi. Sbattere insieme il latte, l'uovo e il burro fuso.

   Aggiungere il bagnato nella miscela asciutta, e mescolare con una forchetta - cercare di non incorporare troppa aria.
 Lasciare riposare l'impasto per qualche minuto mentre preparate una padella con un po 'di burro o olio (non troppo caldo per bruciare il burro!)Con un mestolo versa circa un quarto di tazza della miscela nella padella e fate cuocere fino a quando vedrete le bolle e intorno ai bordi , girare e cuocere fino a doratura. Tenere al caldo sotto un canovaccio o in forno poco caldo.

Il mio prossimo preferito che faccio almeno una volta a settimana a casa mia sono TORTILLAS!!
  
Noi amiamo burritos, tacos, e tutte le cose messicane qui - ho da poco iniziato a fare le tortillas in casa invece di comprare al negozio e la differenza è enorme !!! Prende un po 'di tempo, ma ne vale la pena!

      400 gr di farina 00
 1 cucchiaio di burro (freddo) tagliato a cubetti
1 cucchiaino di lievito in polvere 
 pizzico di sale
175 ml di acqua super caldo

Mescolare la farina, il lievito e il sale. Agiungere nei cubi di burro con le dite fino a quando sono "di sabbia". Lentamente incorporare l'acqua calda fino a quando non si riunisce in una palla, girare sul top e impastare fino ad ottenere una bella consistenza liscia. Lasciare riposare per 10 minuti e poi formare in circa 8 pezzi, stendere con il mattarello fino a molto sottile. In una padella calda, cuocere per circa 30 o 40 secondi al lato (ci saranno alcune bolle formando!) E poi girare per altri 30 secondi sull'altro lato. Non troppo o diventeranno secca e difficile da rotolare! Mantenere fresco in forno poco caldo coperto da un canovaccio umido.

 Con questi è possibile aggiungere alcune spezie in polvere a piacere! Mi piace l'aggiunta di un po 'di peperoncino in polvere o qualche chipotle e sale di chili... le possibilità sono infinite!! Servite questi con pollo alla griglia, avocado, lattuga, salsa piccante e una spruzzata di lime fresco!!

Happy Halloween!!


How is it already the end of October??

I have to admit that Halloween is fun...in America.
Here we haven't got much of an opportunity to celebrate and trick or treat, but we do our best with the annual pumpkin painting and carving contest with our friends Max and Gemma and their daughters. 
Costumes are a must, as are yummy treats!
A quick post for you all for some Halloween inspiration...

Steffi's Bloody Ghost Cake Pops!!

Red Velvet Cake  
60g butter (room temp)
150g sugar
1 egg
25 g cocoa powder
½ tsp vanilla
150 g flour
½ teaspoon salt
120ml buttermilk
1 teaspoon red food coloring
½ tablespoon white vinegar
½ teaspoon baking soda

Cream butter and sugar, add the eggs. Add the cocoa and vanilla and mix well. In a separate bowl, add the sifted flour and salt. To the sugar and egg mix, add ½ the flour / salt and mix well, then ½ buttermilk followed by other half flour and finally buttermilk. When it's all mixed well, add the food coloring. In a glass, combine white vinegar and baking soda and add at the end.
Pour into a 20cm lined cake tin and bake 180 degrees C for about 30 minutes. Leave to cool completely.

Frosting
125g butter (room temp)
200g powdered sugar
1 tsp vanilla
(And some red coloring if you like!)

Combine all and mix well.

Assembling the Cake Pop
Lollipop sticks
50g melted chocolate
Sugar paste fondant - White

Crumble the cake finely (must be completely chilled) in a bowl. Add a tablespoon at the time the frosting, and mix with the crumbs until you get a smooth but not too wet mixture (You may not need all the frosting). Form balls with your hands and place on a baking sheet covered with parchment paper. Dip the sticks in a bit of melted chocolate and insert into balls. Rest 30 minutes in the fridge.

To complete, roll out thinly the white sugar paste. Cut circles with a glass or cookie cutter. Take the cake pop and smear on a bit of the extra frosting (to help attach the fondant). Put the circle of sugar paste and form the ghost's body. You can make the eyes and mouth with melted chocolate or black fondant. Rest the completed pops in the refrigerator - it helps to use flower foam to keep them standing upright!

Come è già la fine di Ottobre ??

Devo ammettere che Halloween è divertente ... in America.

Qui non abbiamo molto occasione per festeggiare e fare "dolcetto o scherzetto", ma facciamo del nostro meglio con la pittura delle zucche e il concorso annuale di "Jack O'Lantern" con i nostri amici Max e Gemma e le loro figlie.

I costumi sono un must, anche i dolcetti strabuoni!

Un post veloce per tutti voi per qualche ispirazione Halloween ...




Red Velvet Cake

60 gr Burro (temp ambiente)
150 gr zucchero semolato
1 uova
25 gr cacao settaciato
½ dose vanillina
150 gr Farina 00
½ cucchiaino sale
120 ml latticello
1 cucchiao colorante rosso
½ cucchiaio aceto bianco
½ cucchiaino bicarbinato

Montare il burro con lo zucchero, unire la uova. Aggiunge il cacao e vanillina e mescola bene. In una ciotola a parte, settaccia la farina e aggiungere sale. Alla massa di zucchero e uova, aggiunge ½ la farina/sale e mescola bene, poi ½ latticello seguito da altra meta farina e finalmente latticello. Quando e tutto amalgamato bene, aggiunge colorante. In un bicchiere, unire aceto bianco e bicarbonato e aggiungere a la fine.
Versa in una tortiera di 20 cm, e infornare 180 gradi per circa 30 min. Lascia raffredare completamente.

Frosting
125 gr burro (temp ambiente)
200 gr zucchero a velo
1 dose vanillina
(colorante rosso a piacere)

Unire tutto e mescola bene.

Assemblaggio di Cake Pop
Stecchi
50 gr cioccolato fuso
Pasta di zucchero bianco

Sbriciolare la torta (Deve essere completamente raffredata) in una ciotola. Aggiunge un cucchiaio a la volta lo frosting, e mescolare con le briciole finche si ottiene un impasto liscio ma non troppo umido (non avrei bisogno di tutto lo frosting). Forma le palline con le mani e mettere su una teglia ricoperta con carta di forno. Immerge i stecchini in un po di cioccolato fuso e infilare nelle palline. Riposa 30 min in frigo.

Per completare, stende sottile la pasta di zucchero bianca. Taglia i cerchi con un bicchiere. Prende i cake pop fredde e spalma sopra un po di frosting avanzata (per fare attacare la pasta di zucchero). Subito mette sopra il cerchio di pasta di zucchero e forma la fantasma. Fare gli occhi e la boca con cioccolato fuso o pasta di zucchero nero. Lascia riposare in frigo.

Being Mamma

Essere Mamma

5 years ago tomorrow the hubs and I began a new adventure called parenthood...it has turned out to be the best job I could imagine. Whilst pregnant with Olivia, we imagined what kind of parents we would be. Strict but not too strict. Fair. Kind and loving. But above all, cool. Yes. COOL. 
I wanted to be that cool mom. Not like MY mom for God's sake...she was SO UNCOOL!  :) 
Let me give you a peek into my life as a child. 
I grew up in a large family. The second of FIVE kids. Two big girls, one boy, and two little girls. Needless to say my mom and dad had their hands full. For the first part of my life, I actually don't remember a time when my mom was NOT pregnant. (Well, time was so abstract when I was younger...)
When we were all in school, I think my mother just hung out in our van the entire day, shuttling us to and from school, voice lessons, band practice, soccer practice, basketball practice, confirmation, choir...the list could go on. Then we came home she cooked for a family of 7.

She made 5 giant birthday cakes a year for her children. Along with 5 each baptism, communion, confirmation, graduation cakes. Holidays. There was ALWAYS cake.

Homework and school projects were carefully supervised by Uncool Mom. 
You wanted a poem written, a jingle, a sweet little diddy for your project? Well, even if you didn't want it, she was there to provide it. Construction paper and string, fabric and household castoffs were transformed into costumes of the Wright Brothers (Seriously, that is not a joke) for an American History project in the third grade. Pioneer dresses and bonnets were lovingly sewn for our fourth grade square dancing and Indiana History days.
It was so Nerdy...Uffa. Who in their right mind would want to be such an UNCOOL MOM?
Fast forward 25 years. 
Crap. 
Me. 
I want to be that kind of mom. 
I am the second generation - the reincaration - of UNCOOL MOM. 
On Olivia's first birthday I wanted to make a behemoth cake with chocolate mousee and smarties all over it. 

It looked like a chocolate brick. It was delicious. 


Second birthday - Elmo cake pops.


Third birthday - Minnie Mouse cake.


Fourth birthday - Princess cake. 


Were there costumes? Yes. 
Did I kill myself for days getting things ready for the party? Yes. 
So. The verdict is in. I am officially the Uncool Mom. 
And damn proud. 
Now, if you will excuse me, I must get back to constructing a 6 layer cake with the theme of Mermaids and Pirates. 
Is there a mermaid costume for the guest of honour herself? Yes. 
Is mamma considering dressing like a pirate? You damn well bet I am!!

PS - Thank you, Mom, for being awesome, even though you are a nerd. I learned from the best... 

Being Mummy

5 anni fa il marito ed io iniziato una nuova avventura come genitori...si è rivelato essere il miglior lavoro che potessi immaginare. Mentre incinta con Olivia, abbiamo immaginato che tipo di genitori saremmo. Rigidi ma non troppo. Fiera. Gentile e amorevole. Ma soprattutto, cool.  
Sì. COOL.  
Volevo essere quella mamma cool. Non come la MIA mamma per l'amor di Dio ... era troppo UNcool! 
Vi spiego un po' la mia vita come una bambina.

Sono cresciuta in una famiglia numerosa. La seconda di cinque figli. Due grandi ragazze, e poi i piccoli,



un maschio e due femmine. Inutile dire che la mia mamma e papà avevano le mani piene. Per la prima parte della mia vita, veramente non ricordo un momento in cui mia madre non era incinta. (Beh, il tempo era così astratto quando ero più piccola...)

Quando eravamo tutti a scuola, penso che mia madre e stata fuori della scuola nel nostro furgone tutto il giorno, e ci ha portato da scuola, a lezioni di canto, musica, calcio, basket, catechismo, coro ... la lista potrebbe continuare. Poi siamo tornati a casa e lei ha cucinato per 7 persone. 

Mamma ha fatto 5 gigante torte di compleanno l'anno per i suoi figli. In piu' 5 ciascuno torte per battesimo, comunione, cresima, laurea. Le feste, c'era sempre le torte.

Progetti e compiti sono stati supervisionati da Uncool mamma.  
Volevi una poesia scritta, un jingle, un piccolo canzone dolce per il vostro progetto? Beh, anche se non volevi, lei era lì per fornire. Carta e corda, tessuto e scarti domestici sono stati trasformati in costumi dei Fratelli Wright (Veramente, non è uno scherzo! Mi ricordo bene!) per un progetto di storia americana in terza elementare. Abiti da Pioneer e cappelli sono stati amorevolmente cucito per la nostra Square Dance di quarto per Storia di Indiana .
Era così "Nerd" ... Uffa. Chi sano di mente vorrebbe essere tale un UNCOOL MOM?
Fast forward 25 anni.  
Cavolo.
Io.  
IO voglio essere quel tipo di mamma.

Io sono la seconda generazione - la reincaration - di UNCOOL MOM.

Il primo compleanno di Olivia, volevo fare una torta gigante con mousse di cioccolato e coperto di smarties. Sembrava un mattone di cioccolato. È stata deliziosa.  
Secondo compleanno - Elmo cake pops.  
Terzo compleanno - torta Minnie Mouse.  
Quarto compleanno - Torta Principessa.

Erano costumi? Sì.
Mi uccido per giorni preparare le cose per la festa? Sì.

Allora. Il verdetto. Sono ufficialmente Uncool Mamma.  
E sono orgogliosa.
Per ora, mi scusate, devo tornare a costruire una torta 6 strati nella tema delle sirene e pirati.

C'è un costume da sirena per l'ospite d'onore Olivia? Sì.
E la mamma vestirsi come un pirata?  SI SICURAMENTE !!

PS - Grazie, mamma, per essere impressionante, anche se sei una "nerd". Ho imparato dal migliore ...

Biccies Make It Better


Biccies. Biscuits. Cookies. 
(Italiano sotto!)

Whatever you want to call them, they can always make your day a little shinier. 
I have a weak spot for the usual American suspects...Chocolate Chip, Peanut Butter, White choc and cranberry. But lately in my quest to branch out, I kept running across an Australian biscuit called Melting Moments. 
The well-known Aussie Donna Hay has a couple recipes out there. Pinterest is a mine field...you almost can't avoid the recipes on there. I took this as a sign. 
Must. Make. Melting. Moments. 
I'm easily convinced.


The great thing about this recipe is that it is really easy enough to do with a small person...i.e Miss Livvy. 
She helped me shape and form the biscuits, pipe the filling and sandwich them together. See, child labour can be helpful. :) 

In keeping with my Bake-Off roots, I got the cookie recipe from one of my favourite British Bake Off winners, Edd Kimber. (You can find his site at www.theboywhobakes.co.uk)
The vanilla buttercream I used my go-to recipe and the jam was made from frozen berries I needed to rid from the fridge. Yep. Pure Mom class.


 Cookies as follows:
250 gr soft butter
1tsp vanilla bean paste
250 gr plain flour
85 gr powdered sugar
40 gr custard powder (I use Bird's)
1/4 tsp salt

Beat the butter and vanilla until soft. Sift the dry ingredients together and then incorporate slowly until you have a nice even dough. Refridgerate a bit while your oven preheats to about 150 degrees C (300 F).
Roll them into small balls - about a heaped tablespoon - and place about two inches apart on a pan lined with oven paper. With the back of a fork, make a small indention on the top, just enough to flatten the ball just a bit. Bake for about 20 minutes. Cool on tray and then move to cool completely on a wire rack. 


Once they have cooled completely, fill them with a ring of your favourite buttercream and inside that ring of buttercream, a dollop of jam - obviously store bought is just fine here....we are moms,not superheroes! Sandwich with an empty half, and attempt not to eat them all. I found that they are best after a bit of a rest in the fridge. 

 
Verdict: Good God Damn. They are Gooood....Thank you Australia!! :) 

 
Biccies. Biscotti. Cookies.
Qualunque cosa volete chiamare questi, possono sempre rendere il vostro giorno un po' più bello.

Ho una debolezza per i soliti biscotti americani ... Chocolate Chip, Peanut Butter (Burro di Arachidi), Cioccolato Bianco con Miltilli rossi. Ma ultimamente nella mia ricerca per espandersi, ho continuato a trovare un biscotto australiano chiamato Melting Moments.

Il noto Aussie Donna Hay ha un paio ricette là fuori. Pinterest è pieno...non si può evitare le ricette . Ho preso questo come un segno.

MUST: Fare. Melting. Moments.

Sono facilmente convinta.

Il bello di questa ricetta è che è davvero abbastanza facile da fare con una persona piccola ... cioè signorina Livvy.

Lei mi ha aiutato forma dei biscotti, farcire e chiudere i biscotti. Vedi, il lavoro minorile può essere utile. :)

In linea con le mie radici Bake-Off, ho preso la ricetta del biscotto da uno dei miei preferiti vincitori britannico di Bake Off UK, Edd Kimber. (Potete trovare il suo sito a www.theboywhobakes.co.uk)

La crema al burro alla vaniglia ho usato la mia ricetta e la marmellata è stata fatta da frutti di bosco congelati avevo bisogno di liberarsi dal frigo. Si, sono una Mamma di classe... 

Biscotti:
250 gr di burro morbido  
1 cucchiaino di pasta di fagioli di vaniglia  
250 gr farina  
85 gr zucchero a velo  
40 gr polvere per "custard" (io uso Bird)  
Pizzico di sale

 Sbattere il burro e la vaniglia fino morbido. Setacciate gli ingredienti secchi insieme e poi incorporare lentamente fino ad ottenere un impasto liscio. Raffredare un po' mentre il forno preriscalda a circa 150 gradi C.  
Rotolare in piccole palline - circa un cucchiaio colmo - e mettere circa due centimetri di distanza su una teglia foderata con carta da forno. Con la parte posteriore di una forchetta, fare una piccola indentazione sulla parte superiore, quanto basta per appiattire la palla un po'. Cuocere per circa 20 minuti. Raffreddare su teglia e poi spostare a raffreddare completamente su una gratella.

Una volta che si sono raffreddati completamente, riempirli con un anello di crema di burro e dentro l'anello, una cucchiaiata di marmellata - ovviamente comprato al supermercato è proprio bene qui .... siamo mamme, non supereroi! Chiude con un'altra meta, poi prova di non mangiare tutti. Ho scoperto che sono meglio dopo un po' di riposo in frigo.

Verdetto: Good God Damn. Sono buonissimi.... Grazie Australia !! :)

Fairy Tales



Una Vita di Sogni

I'm back! And the blog is going bilingual! 
I'll be a bit vague and say that since the last time I wrote something on here, I have been slightly busy. 

Busy raising a family, keeping a house, and chasing my dreams...dreams I never knew I actually had to be honest.  Which got me to thinking...at what point does a person say, "Ok, that's enough. I've done my lot"?

Many would listen to popular opinion. A woman of a certain age, married, kids, career, etc etc has certainly enough on her hands and most likely does not need to go out looking for more to do. 

Someone like me...well within 5 years of meeting H, we were married with a kid and a mortgage. It was insane. Would I do it all over again? You bet your ass I would. 

But yet, through the life changes, the cultural changes and the professional changes I undertook when I transplanted myself to be with him, I still crave more. My life and my family fulfill me like crazy, but why stop there...there is always more.  
I want to be better. 
A better wife, a better mother, a better speaker, a better cook, a better gardener...the list goes on. 

For the people who let someone else say that they should probably stop there, I am here to say that you don't have to. 
 For all the young girls who tell themselves that they can't...I am here to say YOU CAN. 

About 10 years ago, a career counsellor told me the ONLY WAY that I would be able to travel the world and experience life in other places was to get a job as a flight attendant. 
Seriously. That is not a joke. 

Whatever you want to do, you can do it. 
You have to sweat a little, as these things do not come for free, but the hard work is worth it. 
I wanted it. And I got it. 
Everything after that is the icing on the cake...

 A Life of Dreams

Sono tornata! E il blog da oggi e bilingue!

Sarò un po 'vago e dire che dall'ultima volta che ho scritto qualcosa qui, sono stato un po' impegnata.

Impegnata fare crescere una famiglia, mantenere una casa, e inseguire i miei sogni...sogni non ho mai saputo di avere onestamente. Questa mi ha fatto pensare...a che punto una persona dice: "Ok, ora basta. Ho fatto la mia parte"?

Molti ascoltare l'opinione popolare. Una donna di una certa età, sposata, figli, carriera, ecc ecc ha abbastanza sulle sue mani e molto probabilmente non ha bisogno di andare in cerca di più da fare.

Qualcuno come me...entro 5 anni di conoscere H, ci siamo sposati con una bambina e un mutuo. E 'stato crazy. Io vorrei fare tutto da capo? Puoi scommetterci il culo lo farei.

Ma ancora, attraverso i cambiamenti di vita, i cambiamenti culturali e le cambiamenti professionali che si sono impegnati quando ho trapiantato me stesso di stare con lui, ho ancora bisogno di più. La mia vita e la mia famiglia mi soddisfano tantissimo, ma perché fermarsi qui ... c'è sempre di più.

Voglio essere migliore.

Una moglie migliore, una madre migliore, un altoparlante migliore, una migliore cuoco, un giardiniere migliore ... la lista continua.

Per le persone chi lasciare qualcun altro dice che probabilmente dovrebbe fermarsi qui, io sono qui per dire che non è necessario.

  Per tutte le giovani ragazze che si dicono che non possono...io sono qui per dire che si può.

Circa 10 anni fa, un consulente di carriera mi ha detto che l'unico modo che io sarei in grado di viaggiare per il mondo e vivere la vita in altri posti è stato quello di ottenere un lavoro come Air Hostess.

Seriously. Questo non è uno scherzo.

Qualunque cosa si vuole fare, si può fare.

Devi sudare un po', in quanto queste cose non arrivano gratis, ma il duro lavoro vale la pena.

Lo volevo. E ho preso.

Tutto ciò dopo che è la ciliegina sulla torta ... :)
